The joy of Jambalaya! Jambalaya is a dish that you can basically put anything in, allow it to cook and call it done! And this is exactly what I need as fulltime RV’ers. 

This is how I recently made Jambalaya and next time I make it, I will probably change it up a bit because that is what we can do with Jambalaya. But this mixture turned out wonderfully!

1 Ingredients


1 t oregano

1 T garlic powder

1 T Worcestershire sauce

1 T chili powder

1 ½ T Creole seasoning

3 C chicken broth

1 can diced tomatoes

A couple of dashes of tabasco

1 1/2 C rice 

2 Fresh ingredients

Vegetables & Meat:

5 – 6 Carrots, sliced

5 – 6 Celery, sliced

1 Onion, chopped

3 links of Sweet Italian Sausage, sliced

4 links Andouille Sausage, sliced

1 can chicken breast

1 can of oysters

I mixed the dry ingredients together in one container and sat it aside.

3 In the Crockpot

After preparing the vegetables and slicing the meat I placed the meat in the crock pot then mixed in the vegetables.

After pouring the broth, tomatoes and tabasco sauce over the meat and vegetables, I then stirred all the dry ingredients in and stirred the mixture up slightly then allowed it to cook.

5 -6 hours in the Crockpot

My crockpot gets quite hot so after about 5 ½ hours I cooked the rice then added it in. While stirring the rice in, I also added the oysters. I then allowed it to heat back up for about 10 to 15 minutes, then served.

A little spicy, just the way we like Jambalaya!
